- 4 slices thick-cut bacon
- 4 boneless skinless chicken breasts (about 1 3/4 lbs.)
- Kosher salt
- Freshly ground black pepper
- 2 tsp. ranch seasoning
1 1/2 c. shredded mozzarella
- Chopped chives, for garnish

- Combine the salad ingredients in a medium-sized bowl.
- Place the vinaigrette ingredients in a small blender or magic bullet and blend until smooth.
- Pour the vinaigrette over the salad and toss to coat.
- Serve chilled or at room temperature.
